A Perfect Low Point Breakfast

I love making a hearty breakfast on Saturday mornings. Now that I got Art on WW with me, I am more committed than ever to finding great Saturday morning recipes.

How about some 1 point pancakes? Hm? Sounds amazing, right? They are:

Whole Wheat Pancakes
yields: 7-8 pancakes

3/4 cup whole wheat flour
1/3 cup unsweetend applesauce
1/2 tablespoon baking powder
1/2 cup fat free butter milk OR skim milk with 1/2 tsp lemon juice mixed in
1 egg white, lightly beaten
1/2 tablespoon cinnamon
3 packets no-cal sweetener

Directions: Heat a large skillet or griddle that has been sprayed with non-stick butter flavored cooking spray. Spoon two good sized heaping tablespoon fulls of the batter into the skillet per pancake and spread out slightly. Let cook like a regular pancake and then flip, allowing to cook another minuet or so. Serve!

Per pancake: 67 calories; 2 gm fiber; trace fat (1pt)
for three pancakes: 202 calories; 6 gm fiber, 1 gm fat (3pts)

but guess what? I made these even better. I added a jar of apple baby food. It added 70 calories and TWO serving of fruit! If you have a man in your house who doesn't adore eating a raw apple, this is a great option for adding some nutrition to food.

How about some Protein?



These are one point sausage patties. The brand is a little shady (Old folks? With a crazy pig?) but they were delicious either way!

I also cut up a cantaloupe and that completed the meal. It was pretty delicious and point appropriate for both of us.
